This sparkling wine was crafted using traditional Champenoise methods. It is a blend of 56% Pinot Noir from the Krause Vineyard in Los Altos Hills and 44% Chardonnay from Mount Eden. Both lots were whole-cluster pressed for delicacy, fermented in stainless steel tanks, transferred to neutral oak barrels for aging, blended, tiraged, and then bottle-aged for a further 20-months. A wine of great balance, this mineral-edged rosé offers a mouth-watering nose full of enticing wild strawberry aromas, delightful toasted brioche nuances and a trace of rose petals. Delicious as an aperitif or served with a wide range of cuisine, from fresh oysters to grilled prawns, smoked salmon, mussels, almonds and olives, it matches splendidly with soft cheeses, artichokes, asparagus and even salted potato chips.
