Description
VARIETAL. 100% Sauvignon BlancVINEYARD. Cedar Lane Vineyard, Arroyo Seco.
WINEMAKING. Grown in the rugged soils of Arroyo Seco, these grapes were hand-picked at dawn, ensuring they remained chilled upon arrival at the Picchetti crush pad. With care, the clusters were gently loaded into our small bladder press, and the pristine free-run juice was promptly transferred to stainless steel tanks. Here, it underwent a patient 33-day fermentation process followed by six months of aging. We intentionally avoided secondary malolactic fermentation to maintain the wine's pristine, crisp texture, while weekly stirring of the lees enhanced its aromatic profile.
TASTING
Aroma: Vibrant tropical aromas beautifully complemented by delicate floral hints of orange blossom, adding an extra layer of complexity and richness.
Palate: Clean and invigorating, it offers lingering notes of orange blossom, lemon curd, mango, passion fruit, white peach, and apple.
FOOD PAIRING. Enjoy this delicate wine with Japanese cuisine such as soba noodles, shabu shabu, or sushi. It is delightful with petrale sole, oysters or a goat cheese tart as well as an Indian chicken tikka masala
