Description
VARIETALS. 66% Sangiovese, 25% Graciano 6% Pinot Noir & 2% Muscat.VINEYARDS. The Sangiovese is from Machado Creek Vineyard in Morgan Hill, The Graciano is from The Terra Alta Vineyard in Clements Hills. The Pinot Noir is from Truchard in Carneros and the Muscat Canelli is from the Scheid Vineyard in Monterey County.
WINEMAKING. This sparkling wine is a blend of tank-fermented Sangiovese rosé, as well as Muscat, Graciano *saignée and Pinot Noir to add color and a delicate finish. Once the final blend has been made, the wine is cold stabilized, CO2 is added and then bottled under pressure.
*Saignée (“sohn-yay”) means “to bleed,” and it also describes a method of rosé winemaking that involves “bleeding” off a portion of red wine juice after it’s been in contact with the skins and seeds.
TASTING
Aroma: Notes of grapefruit, rose petals, rhubarb, strawberry, raspberry & melon.
Palate: A fruit-lovers dream, with bright and refreshing acidity and flavors of pomegranate and citrus fruits.
FOOD PAIRING. Pop the cork and enjoy with fresh fruit, goat cheese, salty foods such as buttered popcorn, fried calamari, smoked salmon, oysters or caviar.
