Description
VARIETALS. 37% Chardonnay, 34% Sauvignon Blanc and 29% Muscat Canelli.
VINEYARDS.
The Chardonnay is sourced from Leslie’s Estate on Montebello Road, the Sauvignon Blanc is sourced from Cedar Lane, Arroyo Seco, and the Muscat Canelli is from Peirano Vineyard in Acampo, Lodi.
WINEMAKING. Bottled in our signature Pavone bottle—Pavone meaning "peacock" in Italian—this unique blend strikes a beautiful balance between three distinct varietals. Each component was vinified separately: the Sauvignon Blanc and Muscat Canelli were tank-fermented to preserve freshness, while the Chardonnay was barrel-fermented to add richness and complexity. The final blend was aged on the lees for seven months before bottling, creating a layered and elegantly integrated wine.
TASTING
Aroma: A vibrant, aromatic bouquet evoking a citrusy summer garden, with layers of honeysuckle, jasmine, lychee, mango, and stone fruit.
Palate: Crisp and refreshing, the palate showcases a lively interplay of tropical fruit, apricot, and ripe peach, and a touch of minerality.
FOOD PAIRING. A perfect match for Thai and Indian cuisine, soft ripe cheeses, crab cakes, shellfish, and lobster. The wine’s vibrant acidity and aromatic profile complement both spicy dishes and rich, buttery seafood.
